About this coffee :
This coffee was grown by Duberney Cifuentes at Finca La Espana. During cherry-picking, special attention was paid to selecting only the ripest cherries. Once picked, the cherries were then fermented underwater for a period of 14 hours. Then the whole cherries were placed on raised beds for a period of 25 days until ideal moisture content was reached.
Duberney’s farm is one of the first farms in the Planadas region to have started exploring exotic varieties. This coffee variety is well known for the XXL-size of the beans.
The downside of this variety is definitely its low productivity – sometimes being lower than 50% compared to a modern variety. Resulting in farmers often reluctantly plant this particular variety as it takes a lot of space per tree and therefore is a lower yielding crop.
But the awesome note about Maragogype coffee is its ability to impress with its intense body and shows remarkable flavours of different fruits and high sweet notes, like blueberry, tropical fruits & stonefruits, with hints of pistachio finish.
